If you wish to surprise your family and feed them some special dish, then Stuffed Zucchini is just what you need. The dish is tasty, nutritious and quite simple in cooking. Your daughter will gladly cook it with a bit of your help.

The Ingredients:

— 500 gm of mincemeat
— 400 gm of tomatoes
— 150 gm of cheese
— 3 cloves of garlic
— 3 eggs
— 2 onions
— 1 big zucchini
— parsley
— pepper, salt


Scald tomatoes with boiling water, peel and chop them finely. Peel onion, cut into small cubes. Grate cheese on a small grater. Peel garlic and pass it through the press, chop the parsley. Peel zucchini and cut it across in the middle — you`ll have two halves-barrels, from which take out the seeds with a spoon, put the halves into the pan with boiling water, turn off the fire and leave them in the water.

Fry onion for 2-3 minutes on hot oil, add garlic, stew 2-3 minutes, put mincemeat, mix and fry under the lid for 10 minutes. Add tomatoes, parsley, mix again and stew 5-7 minutes more, put pepper and salt. Whip slightly raw eggs into the cooled down filling, put half of the cheese and mix quickly till homogeneous mass.

Take zucchini out of the water, stuff with filling, put the halves on the oiled foil with their shears to each other and make a zucchini, sprinkle with the remaining cheese and wrap it tighly into the foil. Put zucchini onto the baking pan, place it into the oven heated till 180 deg, bake 45 minutes.

Take the foil away, bake zucchini 5 minutes more (the oven is heated till 200 deg), take it out of the oven and leave to cool a little. Before serving cut zucchini across onto the portion pieces. Serve with sour cream or other sauce sprinkling with fresh greens. Bon appetit!
